A lot of kitchens in Denver homes were built for a different time, with small counters, tight layouts, and cabinets that don't hold much. The lots matter too. Older Denver blocks tend to be narrow, with detached garages off the alley and very little side yard, so pushing the back wall out is rarely worth what it costs. How Denver's Elevation and Climate Change What We Build

Denver sits a mile up at the western edge of the Great Plains, and that shows up in the kitchen. At 5,280 feet, water boils around 203 degrees instead of 212, and a braise may take about a quarter longer than the same recipe at sea level. Across the grain, wood can shrink close to 8 percent between fully saturated and bone dry. You will see less than that in a finished cabinet, but stack even a fraction of it on a climate that has produced a 66 degree jump in a single day and solid slab doors and wide face frames can start opening at the joints. Water is one thing working in your favor. The city's supply runs soft to moderately hard, a little harder in winter when the reservoirs freeze and the water picks up more minerals.
